Mexican-Style Smoked Chicken Casserole
Smoked chicken is a surprisingly versatile cured meat. It can be prepared in many different ways, such as this family-friendly Mexican style casserole.


500g Kaczanowski Smoked Chicken, thick sliced
250g Sour cream
3 Brown onions, diced
2 Large potatoes, sliced
2 Red capsicums, finely diced
250g Enchilada sauce
375g Mexican style cheese
1 tsp Olive oil
Pinch Smoked Paprika
Handful tortilla strips (to serve)


1. Heat oven to 350°C.

2. Place onions, capsicums and potatoes in a large frying pan. Cook, in olive oil, until the onions are just turning brown.

3. Add smoked chicken, sour cream and Enchilada sauce to the frying pan - with the onions, capsicum and potatoes.

4. Warm the chicken through and turn out onto an oven proof casserole dish.

5. Add remaining ingredients (Cheese and Paprika) to the dish, stir determinedly to combine.

6. Place casserole dish in the oven.

7. Bake for 10 minutes until the sauce is bubbling and the cheese has melted.

8. Serve hot, with salsa or avocado and sour cream.
