Pastrami Notes

A premium eye of beef silverside is lovingly cured in brine, marinated in herbs then rolled in ground peppercorns. The spiced beef is oven sealed, then traditionally smoked over a bed of hickory. After resting, pastrami is vacuum wrapped to ensure its freshness.
