Beef Brawn Notes

Nothing is wasted and everything is savoured. That’s our approach to making premium beef brawn using traditional techniques.

Shin beef and other selected cuts are cured and slow cooked until tender, then seasoned to a Kaczanowski family recipe. The soft meat is pressed into blocks and set with gelatine. Brawn is vacuum sealed to lock in freshness
