Gourmet Bacon, Brie & Potato Layer Bake
It's no secret that the saltiness of bacon goes superbly with creamy flavours, such as brie cheese, and can balance out more savoury ingredients like potato. So it's no surprise to find these three ingredients making another winning combination in this satisfying winter warmer from food blog Simply Delicious.


  • 250g Kaczanowski gourmet bacon, chopped
  • 8 large potatoes, thinly sliced
  • 250g brie cheese, sliced
  • 4 Australian garlic cloves, sliced
  • 500ml cream
  • 6 sprigs fresh thyme (with leaves removed)
  • Salt & pepper to taste


1. Pre-heat the oven to 200°c.

2. Place a large, oven-proof pan over high heat then fry the chopped bacon until crisp.

3. Once ready, remove the bacon from the pan, leaving the cooked fat behind.

4. Layer the potatoes, brie cheese (reserve a few slices for the topping), bacon and garlic in the pan, seasoning the layers as you go.

5. Season the cream with salt and pepper then pour over the potatoes.

6. Cover the potatoes with fa lid and place in the oven.

7. Allow to bake for 45 minutes or until the potatoes are soft.

8. Top with the remaining brie cheese then place back in the oven and allow to bake until golden brown on top.

9. Remove from the oven and serve.
