Egg, Smoked Chicken & Maple Breakfast Waffles
Breakfast is said to be the most important meal of the day. And, with a tower of waffles, maple syrup and smoked chicken to greet you as the sun rises, who are we to disagree? If you like this recipe you'll find more amazing creations via the Nutritionist in the Kitchen food blog. 


For the waffle dough:
2 tbsp Oat flour (gluten free)
1 tbsp Ground flaxseed
½ tsp Baking powder
2 tsp Pure maple sugar (or alternatively use unrefined granulated sugar)
2 egg whites
2 tbsp Almond milk (unsweetened)

NB: If you do not have a waffle iron / waffle maker, ignore these ingredients and instead select a pack of organic, gluten free waffles from your local store

For the fillings:
1 large egg, soft poached
50g Kaczanowski smoked chicken, thin sliced

To serve:
Pure maple syrup


To make the waffles:
1. Combine the oat flour, ground flaxseed, baking powder, and maple sugar (dry ingredients) in a large bowl.
2. Whisk together the egg whites and almond milk (wet ingredients) in a separate bowl
3. Pour the wet into the dry mixture and stir until smooth.
4. Heat your waffle iron and add batter to the iron, and cook according to manufacturers instructions to make 2 waffles.

To make the filling:
1. While the waffles are cooking, soft poach a whole egg and warm the chicken in a skillet.
2. When the waffles are done, top one waffle with the chicken breast, and the cooked egg, then top with the other waffle to form a sandwich.
3. Drizzle with maple syrup and serve hot.
