The truth about smallgoods: What you need to know

This post draws on research and position statements from the Australian Meat Industry Council (AMIC), and we’d encourage anyone wanting the full picture to read their papers linked below.

If you’ve seen recent headlines linking smallgoods to health concerns, you’re not alone in wondering what to think. As a family business operating for over 40 years, we want to address these concerns honestly because we believe you deserve the full picture.

Smallgoods are not ‘ultra-processed’ foods

You may have heard the term ‘ultra-processed’ thrown around lately. According to the NOVA food classification system, ultra-processed foods are defined by the use of industrial additives and processes. But does that mean all smallgoods are ultra-processed?

All Kaczanowski products are made with great care in the selection of ingredients and the production process. Our smallgoods are made using traditional cooking and curing processes that have been part of Australian and global food culture for generations.

We use only Australian-grown Pork, Beef, Lamb and Chicken, with the goal of producing premium quality products. This is a far cry from the kinds of cheap meat products you’d normally find in the supermarket.

What about nitrates?

Nitrites are natural compounds found in many everyday foods. In fact, vegetables like spinach, celery, and beetroot are among the biggest sources in our diet. According to Food Standards Australia New Zealand (FSANZ), vegetables account for 42-78% of total dietary exposure to nitrates and nitrites. Processed meats, by comparison, contribute less than 10%.

These compounds also serve a critical safety function. They prevent the growth of dangerous bacteria, including the botulinum toxin responsible for botulism, a risk that the smallgoods industry has managed for hundreds of years. You can read more about how we approach this topic in our previous article on sodium nitrate.

Our commitment to you

Every product we sell is made in compliance with Australian food safety standards. We’re proud of what we make, and we’re confident that smallgoods, enjoyed as part of a balanced diet alongside vegetables, fruits, and whole grains, have a rightful place on Australian tables.

If you ever have questions about our products or how they’re made, we welcome the conversation.
