Pepper Rare Roast Beef Notes
Pepper rare roast beef is made from Australian yearling topside, a lean but flavoursome cut. The topside is prepared to a Kaczanowski recipe: carefully cured, spiced with ground pepper and seasoned with herbs. The cured beef is then netted into a succulent oval and cooked in its own juices. As its name suggests, the roast beef is cooked rare with a distinct, peppery flavour.
